Date Day

What? No photos? I know, I've been very lax about taking photos of things lately. I don't know why. I think they really make my blog. I'll try to do better. For now though, I'm going to tell you about my Saturday.

Hubby and I haven't had a real date in a few weeks now. You may remember that we had started having dates again after some marital trouble late this summer. So, I mention the date to him on Friday night and he says we've basically spent our date money during the week on the take out food I've had him pick up on the way home from work. Yes, you read that right and it means that I am not doing well on my eating better. I am doing better, to some extent, with the no eating things with hfcs, but I have no way of knowing about some of our take out food. So, thinking back on the days I asked him to bring something home, I would not have changed it. Oh well.

The first thing on the agenda for Saturday was going to the dump. He bribed me to go with him, so I did for the very first time. We kept joking about it being our date! I never really realized that going to the dump, of all places, could be fun, but it was.

Later in the afternoon, I cooked chicken enchiladas (from scratch!) for the first time also. There are a lot of steps to this recipe (Hubby helped at times). All in all, it wasn't difficult and they were very good. A big hit here. I decided that next time I make them, I'll try to substitute some of the higher calorie ingredients for lower calorie ingredients though and see if we like it as much. As the recipe is, I can't eat it often. I got the recipe from The Pioneer Woman. She has a cookbook out that I'm very tempted to buy now. We're going to be trying a few more of her recipes soon and if I like them as much as this one, I will be buying it.

All in all, our date day went very well. We spent a lot of time together, doing things we normally don't do and we had fun.

So....did you just leave things at the dump or did you take stuff, too??????

Unfortunately, our dump leaves a lot to be desired. It's basically a dumpster. They must take it to Big D. I was quite disappointed.
